Now, let’s get into this week’s recipe:

🔥 Crispy BBQ Jackfruit Tacos 🔥

Ingredients:

For the tacos:

  • 2 cups canned jackfruit, shredded

  • ½ cup BBQ sauce

  • 1 tbsp olive oil

  • 8 small corn tortillas

For the toppings:

  • 1 cup red cabbage, shredded

  • ¼ cup vegan mayo

  • 1 tbsp apple cider vinegar

  • ½ avocado, diced

  • Fresh cilantro

The Method:

1 - Sauté and Simmer

Heat up your olive oil in a frying pan over medium heat.

Toss in the shredded jackfruit and sauté until it’s slightly crisp around the edges.

Once it’s looking crispy and delicious, add the BBQ sauce and let it all simmer together for about 5 minutes.

2 - Whip Up the Slaw

In a bowl, mix your shredded red cabbage with vegan mayo and apple cider vinegar.

Give it a good stir until everything’s evenly coated.

This slaw is the perfect crunchy, tangy topping for your tacos.

3 - Assemble the Tacos

Warm your corn tortillas until they’re soft and ready to be loaded.

Spoon in a generous portion of that smoky jackfruit, add a heap of your zesty slaw, then top with diced avocado and a sprinkle of fresh cilantro.

4 - Enjoy the Fiesta
