Matcha Cookies That’ll Blow Your Head Off 🤯

Before we get into today’s recipe, I wanna begin by saying this:

Now,
These little green legends are a next-level sweet treat.
They’re indulgent but healthy with a matcha kick.
Let’s bake…
What You’ll Need:
1 cup all-purpose flour
1/4 cup almond flour
1/2 tsp baking soda
1/4 tsp sea salt
1/2 cup vegan butter, melted
1/2 cup coconut sugar
1/4 cup maple syrup
2 tbsp matcha powder
1 tsp vanilla extract
Optional: Vegan choc chips or chopped nuts
For Finishing:
1/2 tbsp matcha powder
1 tbsp icing sugar
The Method:
1. Preheat the Oven:
Preheat your oven to 200°C (392°F).
2. Mix Dry Ingredients:
In a medium bowl, whisk together all-purpose flour, almond flour, baking soda, sea salt, and matcha powder until everything is well combined.
3. Combine Wet Ingredients:
In another bowl, mix the melted vegan butter, coconut sugar, maple syrup, and vanilla extract until smooth and creamy. The consistency should be soft but well-blended.
4. Combine Mixtures:
Gradually add the dry mixture to the wet ingredients and stir until a dough forms. If you’re feeling extra, fold in some vegan chocolate chips or chopped nuts for texture.
5. Scoop the Dough:
Scoop out tablespoons of dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart. The dough should be soft but firm enough to hold its shape.
6. Bake:
Bake for 8-9 minutes, or until the edges are lightly golden. The centers might look slightly underbaked, but trust me, they’ll firm up as they cool, giving you that perfect chewy texture.
7. Cool and Finish:
Let the cookies cool on the baking sheet for a few minutes, then transfer them to a wire rack. In a small bowl, mix the matcha powder with icing sugar. Once the cookies are slightly cooled, sift this mixture over the top to give them that chef’s kiss finish.
Why These Slap
Mate, the matcha brings this wild, bitter edge that dances with the sweetness.
That almond flour and vegan butter combo is chewy heaven.
And that dusting on top looks so flipping good you’ll wanna frame them.
True story:
I was fasting when I made these for the “F*ck That’s Vegan?!” episode, so no taste test for me unfortunately...
My boy Ashley rocked up to get some pics, and as they came out of the oven, I stared him down like
“Mate, don’t mess about - tell me straight, are this book-worthy?”
He bit in, eyes rolled back, and started laughing like a madman 💀
“Bro, crisp outside, fluffy inside, matcha bitterness with choc chips. So piff.”

And I’m not talking about an eBook.
I’m talking about a physical book you can hold and buy in stores…
That’s all I’m saying about the book at this time though.
